You're confusing quality with reliability. Ford overall probably makes better cars than Toyota (better interior, handling, engines, NVH), but Toyota makes more reliable cars. You don't care about long-term reliability when renting a car, so you always take the best car available, not the most reliable one.
Front end looks good up close, as too does the interior. Not a fan of full LCD dashboards in any car honestly, nor big infotainment screens. Physical needles only, or LED displays in some cases. That's why I'm fond of my 2014. Needles for rpm and speed, little led matrix display for trip, fuel and temp. Nice n simple, not cluttered.The engine may struggle a little more, but the Fiesta feels decidedly grown up at highway speeds. The Fiesta will definitely be fine for highway driving but the Civic is an upgrade. It's even better than the Fiesta's bigger brother Focus on the highway IMO. Much less noise and vibration intrusion into the cabin.
